Sloppy Joes

Servings for 100

Meat: 

15 lbs. ground beef

5 large onions, chopped

12 cans tomato soup

1 ½  cups ketchup

3/4 cup mustard

1 cup brown sugar

3/4 cup lemon juice

3/4 cups Worcestershire sauce

1 ½ cups vinegar

2 tsp tabasco sauce

Buns:

7 packages of 16-ct. Sara Lee hamburger buns at Sam’s Club

Toppings:

2 jars Mt. Olive Dill Pickle Chips, 64 oz. at Sam’s Club

Prep:

Can divide the recipe above in half recipes for easier cooking.

Brown the ground beef with chopped onion. Drain. Add the rest of the ingredients and simmer for 20-30 mins, stirring often. Keep warm in roaster or crock pots.

Younger children might want only a half bun.

Savory Shredded Chicken

Meat:   35 pounds boneless skinless chicken breast

            -2 36 oz bottles of Italian dressing (Sam’s Club)

            -1 6 pack (12 pouches) dry onion soup mix (Sam’s Club)

Recipe:

5 chicken breasts

1 envelope onion soup mix

1/2 cup Italian dressing

1 tsp. garlic salt

1/4 cup water

Prep:

Cook in crockpot for 6-8 hours. Shred and keep in the juices.

 

Buns:

– 6 bags of 24 count yeast rolls at Sam’s Club.

Toppings:

-2 packs of Member’s Mark Smoked Provolone Cheese Slices (2 lb.) cut slices in half

-1 Mustard 30 oz

-2 BBQ sauce 40 oz

Your choice of a side, dessert, and drink.

 

Loaded Nachos

Roughly 120 servings

Meat: 25 pounds of ground beef with taco seasoning or 30 pounds of pork carnitas.

Topping Options:

– 3 cans on Nacho Cheese Sam’s Club

– 8 26 oz bags of ‘On the Boarder’ chips OR 3 boxes of tortilla chips (2 48 oz bags in each box) from Sam’s Club

– 4 47 oz jars of salsa

– 5 medium heads of lettuce, chopped

– 5 pounds sour cream

– 1-2 (64oz) jars jalapenos

– 6 (16 oz) cans of black beans

– 8 pounds Spanish cooked rice

– guacamole – 16 large avocados

Your choice of dessert, and drink.

Hot Ham & Cheese Buns

Quantities based off order form.

Buy from Sam’s Club:

7 bags of 24-ct. dinner yeast rolls, Sam’s Club.

9 pkgs of Member’s Mark Uncured Ham, sliced (24 good-sized slices in each)

2 pkgs Members Mark Sliced Sharp Cheddar Cheese (2 lbs.)

Prep:

Cut rolls ¾ the way through. Pile 1.5 slices of ham and half slice of cheese on each roll. Wrap individually in foil, or place a bunch of rolls in foil pans and cover with foil to save a little prep time.

Bake:

Bake in warmer at school. 350* for 20 mins or until hot. Cook ¾ of the servings at 11:10 and ¼ servings at 11:40 so buns don’t get soggy.

Add your choice of sides, dessert, and drink.

Hot Dogs, Chili Dogs

Hot Dogs:

7 packages of Ball Park® Classic Beef Hot Dogs, Original Length (24 ct.) at Sam’s Club

Buns:

10 pkgs. 16-ct. Sara Lee hot dog buns at Sam’s Club

Toppings:

1 Picnic Pack (2 Ketchups, 1 Mustard, 1 Sweet Relish) at Sam’s Club

2 jars Mt. Olive Dill Pickle Chips, 64 oz. At Sam’s Club

4 white onions, chopped

10 cans Hormel Chili No Beans (15 oz.)

3 lbs. shredded cheddar cheese

Prep:

Can grill hot dogs or bake them on cookie sheets in the oven at 400* for 15 minutes till hot and sizzling. Keep warm in roaster or crock pots.

Thoroughly heat chili in a crock pot.

Add your choice of a side, dessert, and drink.

 

Pulled Pork

Meat: 40 pounds of bone in pork butt (Boston butt, shoulder roast)

FOUR 10lb pork butts from Sam’s or SIX 7lb pork butts from King Soopers (check for sales)

Optional dry rub recipe for HALF of the roasts:

2 T. pepper

2 T. sea salt

1 T. garlic powder

1 T. onion powder

2 T. chili powder

2 T. brown sugar

Prep:

Rub on seasonings. Cook uncovered in oven at 250* for 10 hours OR cook on low in crock pot for 10 hours. Shred and keep in juices. Can cook 2-3 roasts in a large foil pans in oven at the same time. Freezes well, can cook ahead.

Buns:

– 9 bags of 24 count yeast rolls at Sam’s Club.

– OR 12 pkgs. 16-ct. Sara Lee hamburger buns at Sam’s Club

Toppings:

-3 BBQ sauce 40 oz

-1 Mustard 30 oz

-1 48oz jar sliced pickles, Sam’s (optional)
